Mexican Fideo

This is a dish that takes me back to my childhood. Fideo is a type of pasta that can be used in a soup. This dish can be eaten with corn tortillas or with some kind of crackers. There many different types of ways of cooking fideo. I enjoy making the loose short style of fideo. You can add whatever seasonings to this dish such as green onions, cilantro, and garlic. I particularly like to make it by adding tomato bouillon to give the water a zing flavor to it. This is what I enjoy putting into my homemade Mexican Fideo.
Ingredients:
one or two packages of Fideo two or more tablespoons of tomato bouillon (depends on your taste buds) 1/2 to one pound of ground beef two or three white potatoes two or three tomatoes three to four cups of water1. I would start by peeling and cutting up the white potatoes, then cut up the tomatoes and leave off to the side.
2. Next cook the ground beef. Break up the ground beef into small pieces and cook until brown. Add a small amount of salt for flavor but not too much because you will be adding this to the liquid that is already seasoned with tomato bouillon so you don't want to over load the salt factor just yet.
3. Once the brown meat is fully cooked, set aside. In a good size pot for soup begin to slowly heat before adding the oil to it. You want to add enough oil to where the bottom of the pot is completely covered. Once the oil is heated, add the package(s) of fideo, stir around until it is a golden brown. Keep an eye on it because if not you can easily burn it, trust me I have burned it many times. Fideo cooks and burns very quickly. Once you see that the fideo is at the golden color you like, turn down the fire and move to a burner that is not hot. Meanwhile boil two cups of water in the microwave, once boiling hot add the powered tomato bouillon, stir until the bouillon is completely dissolved. Taste the sodium level of the water to see if you need more salt or tomato bouillon. If it is not salty enough, add more. If it is too much then add more water until it is to your liking.
4. Next, add the water mixture to the fideo and the cooked ground beef. Next, add in the chopped white potatoes and cover and let simmer. Check on the potatoes after ten minutes to feel if the potatoes are soft. Once the potatoes are soft, then add the fresh tomatoes. Let simmer for about another 10-15 minutes. Check on the softness of the fideo, potatoes, and tomatoes. Taste if the soup itself has enough salt to your liking. Like I said before you can add green onions, cilantro, and garlic to the fideo soup as well.
5. You can either saute on another small pan or after the ground beef is done and right in the same pan. If you make a lot of the Mexican Fideo, put your leftovers in various plastic containers once it is cooled down and store in the freezer. The more portions you make the easier it is to defrost. Plus, cuando tienes ganas de comer lo (if you are craving to eat some) you can just defrost the amount you want to eat for yourself or for your children. Instead of defrosting one big container that your forced to eat again the next two days. Enjoy!!
